History of Tonkotsu Ramen
The Tonkotsu ramen recipe was born in a small noodle stand that started its activities in 1934 in the city of Kurume located in the prefecture of Fukuoka (southern Japan).
This small stand then served traditional Japanese noodles, called udon. One day, the owner, also a cook, heard about ramen, a soup made of pasta in a broth made from chicken bones or sometimes a little pork.
As this dish began to spread in the Tokyo and Yokohama area, he went there to study this recipe in a restaurant specializing in ramen. He then made a soup made exclusively from pork bones, which would be the first tonkotsu ramen.The Tonkotsu soup was at that time translucent and slightly white.
In 1947, after accidentally leaving his saucepan on the stove for too long, a cook accidentally obtained a white soup, completely scrambled and spicy. Originating in the city of Kurume, Tonkotsu ramen quickly became popular in the large neighboring cities of Kumamoto and Fukuoka, then spread throughout the island of Kyūshū, and finally throughout Japan. Today, Tonkotsu ramen is also spreading overseas.
